Kristin's Favorite Recipe #1 - Banana Pudding

This was the best!! Super easy to make. I use a box and a half of cookies and only 3 bananas, because that's my favorite! This also tastes better the next day...so make it ahead! I love that they even told me what kind of dish to put the freakin thing in!

EASY BANANA PUDDING

1 family size instant vanilla pudding mix
1 box vanilla wafers
12 oz. carton Cool Whip
4lg. bananas

Follow directions on box for pudding mix. Stir in 1/2 carton of Cool Whip, set aside. In a deep 3 quart casserole dish, place a layer of vanilla wafers, bananas and pudding mix. Repeat 2 or 3 times, ending with wafers. Top with remaining Cool Whip.

  1. For a fun variation of your recipe:

    1 1/3 Cups Vanilla Wafer Crumbs
    1/4 cup sugar
    1/4 cup butter plus two teaspoons (14 tsps.), melted

    Get a box a vanilla wafers and throw them in the blender until you've created about 1 1/3 cups of semi-fine wafer crumbs.

    Mix wafer crumbs, butter, and suger (should be like wet crumbs)and press into a lightly greased 9" pie tin (pam spray works great for this), covering the bottom and sides evenly and smoothly (use your fingers first, then a spoon bottom to smooth and compress. If you have a second pie tin, you can put an empty one top of the one with the wafer crumbs and press together to really smooth and shape the crust) . Bake at 375 for 5 minutes, then allow to cool completely.

    Then the filling:

    Lemon Juice
    1 large banana
    2 4-serving size packages of vanilla or banana pudding (depending on how much banana flavor you want...I use one of each flavor)
    2 1/2 cups cold whole milk
    2 cups of cool whip (about 16oz, but you can get away with one 12oz container)

    Cut the banana into thin slices (a little less than 1/4 inch each), dip each slice in lemon juice (keeps the bananas from turning brown, but doesn't effect the taste), then line the bottom and sides of the pie pan with the slices.

    Combine pudding mix and milk in a bowl and mix until smooth. Lightly fold in 1/2 cup of cool whip quickly before pudding starts to set. Pour into pie pan until full (you may have some pudding left over to enjoy for a snack), smooth out top (once the top is smooth, you can gently shake the pie tin back and forth to make the top even more smooth) and put in the fridge to chill for at least 3 hours.

    Before serving, top with remaining cool whip. Then, after slicing and and putting on a plate, you can garnish each slice with a vanilla wafer topped with a banana slice.

    Easy to make, but impressive looking at a dinner party or social event. Keep it all very cold until you serve it and the pudding will stay firm.
